Meat charred, grilled, or pan-fried at very high temperatures forms compounds that cause cancer in animals; human evidence is suggestive but not yet sufficient.
Detail
Heterocyclic amines (HCAs) and polycyclic aromatic hydrocarbons (PAHs) form when muscle meat is cooked at high temperatures, especially grilling over an open flame. Both are mutagenic in laboratory studies. Population studies have not established a definitive link with typical dietary intake, but high consumption of well-done, fried or barbecued meat has been associated with increased colorectal, pancreatic and prostate cancer risks. IARC classifies frying emissions as Group 2A.
